Yesss Gibaaa! Exactly!

In fact you can use any brownies and cookies recipes you want, you'll just have to spread the cookies mixture on top of the brownie batter and bake them together...
I'm gonna write the recipe I've used very simply ok...

Brookie

Pre-heat the oven to 180°C - 356°F
First: the brownies. Melt 200g chocolate with 125g butter. (double boiler)
Remove from the heat and add in 150g sugar, mix well. Add 4 eggs, one by one, mixing well after each addition. Add about 75/80g flour (2 tbsp in the original recipe but with the cookies dough on the top... I was not sure about the result!) to the mixture. Pour into a square dish (20cm x 20cm - 8x8"). Set aside.

The cookie dough. In a large bowl, whisk 120g soft butter with 190g brown sugar (or less if you want - I used 120g) until it gets creamy. Then add 1 egg. Sift together 220g flour, a pinch of salt and 1 tsp baking powder and stir them into the butter/sugar mixture with 150g chocolate chips.

Drop bits of the cookie dough with a spoon on top of the brownies batter like so....

Bake for about 30/35 min.... but keep an eye on it! At a point I had to cover it with baking paper (didn't have alu) 'cause the cookie dough was baked but not the brownie...

And as I said, you can choose your favorite brownies & cookies recipes and just use them to make your fav' brookies!

I made some cookies with the remaining dough!

The frittata is nice, but you should water the olives down, because they make it a little to salty. I am not a salt person..black and red pepper yes, salt no.

If you ever, ever come here I'll make sure you visit the Douro region and wineries. For a wine lover or maker, there's no place like this one
